Without looking at the Sun classes, or knowing the class that can call appendChild(), I would start with this:

//assuming "billTo" is a class variable
private void appendNewChild(Object billToObject, String sourceField) {
        billTo.appendChild(billToObject);
        billTo.appendChild(new TextNode("\n"));
        billToObject.appendChild(doc.createTextNode(sourceField));
}
