It seems to me that the main benefit for the "polyglot" approach is the
document producer who can use the rich variety of xml tools to generate
the document, without requiring an html5 specific serialiser at the end
of the chain. Most of the time the document consumer is going to be
using a web browser consuming the document as text/html.
