I guess you wording above is fine.
Wrt signature encryption: The signatures are part of the package, contained in META-INF, and don't need to be listed in manifest.xml, so encryption is possible even when signing manifest.xml (w/o storing information for the encryption in the manifest.xml, but in the signature file itself).
Wrt multiple signatures: Also possible for the same reason.
