LibreOffice treats a missing table:display attribute as table:display="true". In Excel, in case I set a display to "false" in the UI, it writes it out. In case I do not change it in the UI, Excel do not write out the data-pilot-member at all. So I conclude, it treats "true" as default. I don't know about handling in Gnumeric.
My proposal is, to set "true" as default.
