This sounds more interesting. 
How can one automate the process of generation of instances?
How can one automate generation of schemas (and as a result generation of instances for each generated schema)?

Have a look also at the XML Schema instance generator from oXygen XML 
Editor (http://www.oxygenxml.com):

http://www.oxygenxml.com/doc/ug-standalone/index.htm

It allows you to specify content generation options for all elements or 
all elements belonging to a namespace or even for a specific element.
