Yeah!  Thanks to David Hunter, who taught me the secret incantation to
Outlook: 

> right-click each address in the To/CC lines, and choose "Send Options...".
In > here, click the check-box that says "I want to specify the format for
messages > to this recipient.", and then choose the MIME/plain text radio
button."
