I'd like to help, but I can't be sure what you mean -- do you mean
your type is simply an atomice enumerated type with 7 values, or a
list type with up to 7 list items, each a member of such an enumerated
type -- that is, is 'A C G' a possible value?

Here's the answer for the first (simpler) case:
<xs:simpleType name="CITW">
<xs:restriction base="xs:NormalizedString">
<xs:enumeration value="Africa"/>
<xs:enumeration value="Antartica"/>
<xs:enumeration value="Asia"/>
<xs:enumeration value="Australia"/>
<xs:enumeration value="Europe"/>
<xs:enumeration value="North America"/>
<xs:enumeration value="South America"/>
</xs:restriction>
</xs:simpleType>
<xs:simpleType name="SHC">
<xs:restriction base="CITW">
<xs:enumeration value="Africa"/>
<xs:enumeration value="Antarctica"/>
<xs:enumeration value="Australia"/>
<xs:enumeration value="South America"/>
</xs:restriction>
</xs:simpleType>
Hope this helps,
