Most XML editors can do this.

For example, xxe and serna (both zero-dollar; serna is open source)
have spell checkers as I recall, and also oxygen, xmetal, xml spy,
stylus studio and probably others. Check for German spelling support
before you buy, as it may be an extra cost or an extra download.

If it's for docbook, there are also some docbook-specific tools
and editors, or editors particuarly optimised for use with
docbook, e.g. conglomerate.
