Have you looked in the Digital Humanities field? There are lots of people publishing Spanish in XML from the literary, linguistic, and historical areas. Someone on the TEI-L mailing list should be able to help.
JSON view of the world has wide diffusion in Spanish mainly because big corps spend on translators to help sell their products. XML is community owned, and is easier to depend on the original english content.
That's partly my fault. The Spanish translation of the XML FAQ is inaccessible as the translator's web site is dead, and I have not had the time to find a replacement.
